James runs our kitchen with a light touch and a deep respect for British produce. He built the Copper Fox menu around the seasons.

The Beef Wellington was a special-occasion triumph: pastry crisp, beef pink edge to edge, and the mushroom duxelles deeply savoury. Worth every penny.
